There are two ways to mark a student as not participating in the recital.
The first way is on the Student detail screen, and this will remove the student from the recital completely. Go to the "Main Students" screen, select the student, uncheck the "Recital" checkbox, and Save Changes.
You can also remove a student from the recital by class. This WOULD NOT remove the student from the recital entirely. Instead, they are not included just for the selected class.
For this option, go to the "Main Classes" page and pick the class. Then click "Students" in the left menu. You will see checkboxes and a button to "Save Recital Settings."

Is there a way to reset the recital settings for all students (to no recital) without having to go into to each account individually?

You are able to edit the Recital setting to a bunch of students at one time from the main Students page using the Class Actions button.
